1 cup butter
2 cups sugar
6 eggs
1 medium tin crushed pineapple with juice
2 tsp. almond extract
2 tsp. lemon extract
4 tsp. vanilla
2 lb. golden raisins
1 lb. glazed cherries
14 oz unsweetened medium coconut
2 lb. mixed fruit
1/2 lb. slivered almonds
3 cups flour
1 tsp. salt
4 tsp. baking powder

Directions:
Directions:
Cream butter and sugar. Add eggs 3 at a time, beating well. Add pineapple and flavourings. Dredge the fruit in 1 cup of the flour. Combine the remaining 2 cups of flour with the salt and baking powder. Add the dry ingredients alternately with the dredged fruit.
Divide into prepared pans. Bake at 225º F until a toothpick comes out clean.

This recipe will yield 1 8" square pan, 1 6" square pan and 1 4" square pan. The 8" pan will bake for almost 6 hours, the 6" pan will require about 5 hours and the 4" pan will need about 4 hours. I line the fruit cake pans with brown paper and parchment.
