1/2 lb. of asparagus spears, bottom trimmed and cut into 2 in. pieces
2 eggs
3-4 pieces of prociutto or pancetta, cut thin
Minced scallions to taste
Olive oil and salt and pepper to taste

Directions:
Directions:
Start sauteing the prociutto or pancetta in a hot cast iron skillet or equivilent with a tablespoon or so of olive oil. Remove the prociutto when it starts crisping up and set aside. Add the asparagus and season lightly with salt and pepper. Sear the asparagus until starting to char all over. Remove the asparagus when its cooked to your liking and place on a plate. Add the eggs and cook over easy. Season to taste. Add over the top of the asparagus and then top with the crispy prociutto. Serve garnishing with minced scallions.
