16 oz. Dark chocolate candy melts (I use Make 'n Mold, AC Moore)
6 oz. cream cheese, softened
5 teaspoons instant coffee
1 teaspoon boiling water
Make 'n Mold Milk chocolate candy melts
Make 'n Mold Vanalla candy melts
chocolate dipped espresso beans

Dissolve coffee in the boiling water. Let set. Microwave the dark chocolate 1 minute. Stir well. Microwave in 15 second intervals, if necessary to finish melting. Using an electric mixer, whip cream cheese. Add the coffee mixture & melted dark chocolate. Whip until mostly smooth. Chill till firm. Roll chilled mixture into small balls. Freeze 15-20 minutes. Melt milk chocolate. Dip firm balls into melted chocolate. Chill about 5 minutes. Drizzle with melted vanilla candy melts. Top w/ espresso bean while chocolate is still wet.

*Chocolate & water do not mix. Just 1 drop of water can ruin your chocolate.
*Candy melts will hold their shape even when melted, so stir first before microwaving.
*Chocolate burns quickly, so melt 15 seconds @ a time after the first minute.
*To drizzle chocolate, melt a handful in a baggie (30 seconds), then snip a tiny corner off bag.
