Bacon Wrapped Dates W/ Romesco Sauce Recipe

2 dzn large dates
1 LB bacon- cut thin or if thick cut slice in half
if you choose to stuff them you can use slivered almonds or manchego cheese or Spanish chorizo ( dried sausage with smoked paprika, not the crumbly kind)

For sauce:
3 plum tomatoes- quartered
1 red pepper- quartered
6 cloves garlic
1/3 c olive oil
1/4c toasted almonds
1 oz red wine vinegar
1 tsp paprika
1 tsp salt
pinch of red pepper flakes

Directions:
Cut a slit down the length of the dates and push the seed out, its big and comes out easily. If you choose to stuff something tasty inside do so now just make sure it can close completely. Firmly wrap a slice of bacon around each date. Lay the dates down on a cookie sheet lined with parchment paper. If you use the side of the date where the bacon ends as the bottom you wont need a toothpick to hold it together.

Place in a 350º oven bake for about 25min or until bacon is crisp
let it cool for a few minutes

For sauce:

Toss tomatoes, red pepper and garlic with enough oil to coat and a sprinkle of salt. Place in 350º oven for 20 min or until the garlic is browned. While this is cooking wrap your dates.
let cool for ten minutes.
Place veggies and all the juices in food processor or blender with the rest of the ingredients except for the olive oil. puree until smooth. Add the olive oil slowly to emulsify the sauce while the blender is running it should have a light consistency but still have some body.

Serve dates on top of sauce but save some to dip.

This Romesco sauce can be used for so many things: Chicken, pork, veggies, pasta. Have fun with it, like add some hot peppers when you roast or even some fresh fennel.
