1 chopped zucchini
1/4 cup chopped green onions
1/3 to 1/2 cup chopped green pepper
2 T olive oil
1 cup corn
6 eggs
2/3 cup grated cheese
Directions:
Directions:
Cook zucchini, green onions, and green pepper in olive oil. Add corn. Beat eggs and stir in the vegetables and roughly 1/3 cup grated cheese. Return the mixture to the skillet and cook over low heat until it begins to set. Scatter over another 1/3 cup cheese and broil until the top is puffed and brown.
