5-lb. pork roast (I prefer the "Boston Butt" cut of pork)
1 (14.5-oz.) can diced tomatoes, or 1 (10-oz.) can regular Rotel
1 (4-oz.) can diced green chilies (omit this if you used Rotel)
2 bottles BBQ sauce, your choice (I mix a sweet and spicy with traditional)
Seasoning mix: garlic salt, cumin, thyme, black pepper, salt
1 large onion, chopped into quarters

1) Rub dry seasoning mix liberally onto all sides of the pork.
2) Heat skillet and brown roast on all sides until crispy.
3) Heat oven to 300º F (150º C). Put browned roast into roasting pan. Add tomatoes, chilies, onion. Add 1/2 c. water to bottom of pan
4) Cover and bake for 8-10 hours. With the difference in ovens around the world, you may want to periodically check to see that it isn’t getting overcooked on the top.
5) Remove from oven and using two large forks, shred well, mixing all the ingredients together as you shred. Don’t worry about the excess liquid, that will help. Mix in BBQ sauce and stir well.
Serve on buns or rolls, with coleslaw and chips for a great American meal.
