3 lb. boneless, skinless chicken pieces (thighs, breasts, or a combination)
1 box crushed Ritz crackers or Saltine crackers
3 c. mayonnaise (not miracle whip)
Garlic salt, dried parsley, black pepper

Directions:
Directions:
1) Heat oven to 350º F (175º C)
2) Mix mayonnaise with garlic salt and dried parsley.
3) Dip chicken into mayonnaise mixture and coat well.
4) Roll chicken into crushed “chip/cracker” of choice, covering completely.
5) Place chicken onto foil-lined baking pan.
6) Bake for 1 hour or until sizzling.

You can use any crackers you like in this recipe. I have used Cheez-Its, panko, potato chips, french fried onions, or a combination of several different things.
