1 large beef shank or short ribs
1 pkg. Italian Sausage (bulk)
2/3 c. kidney beans
2/3 c. split peas
4 to 5 potatoes - cut in thirds
1 bunch of kale (wash and tear into pieces)
6 c. water
Salt to taste
2 T. butter (for frying meat)

Directions:
Sauté short ribs in pan with the butter. When browned transfer to crock pot.

Sauté Italian Sausage in the same pan. Transfer to crockpot and discard fat.

Add 6 cups of water to the pan to pick up the browned bits from the beef and sausage (deglazing).

Add kidney beans, split peas, and potatoes to the crock pot.

Pour the 6 cups of water & deglazed bits into the crock pot.

Set crock pot to low for eight hours.

2 to 3 hours before it is done add kale.
