4 6 oz swordfish fillets
salt and pepper
2 cups fish stock
2 tbsp white wine
1 tbsp olive oil
24 mixed green and black olives
2 cloves garlic thinly sliced
1/4 cup parmesan cheese
2 tbsp Italian parsley

Garnish
Olive oil
parsley

Brandade
1/2 lb Yukon gold potatoes
1/2 cup white wine
2 tbsp lemon juice
2 tbsp olive oil
1/2 lb fresh cod
1/4 cup whipping cream

Directions:
Directions:
Heat oven to 500. Season fish with salt and pepper. Place in a baking dish with a lid. Pour over stock, wine, lemon juice , olive oil and olives.Top each fillet with garlic, parmesan and parsley.Bake covered for 8 to 10 minutes. Place fish on serving plates ,reserving the cooking liquid and the olives. Boil the liquid and olives over high heat until reduced and thickened, about 5 minutes. Pour sauce over fish and serve with Brandade.

Brandade
Cook potatoes and mash or rice them. Cook cod in a pan with the wine, lemon juice and 2 tbsp of olive oil for about 7 minutes or until it flakes. Remove the cod and reduce the liquid to 2 tbsp. Season. Puree the potatoes, cod, reduced liquid and cream. Serve warm with the fish.
