2 c. Cooked white rice, chilled
2 c. Pineapple tidbits, drained
1 1/2 c. Mini marshmallows

Sauce:
1 package (10 oz.) frozen raspberries, thawed
1 T. Cornstarch
1/4 c. Current jelly

1 c. Heavy cream
1/4 c. Powdered sugar
1/4 tsp. almond extract

Directions:
Directions:
The day before serving toss rice, pineapple and marshmallows. Cover and refrigerate overnight.
Make sauce. Drain raspberries, reserve liquid. Add water to measure one cup. Combine liquid with cornstarch, mix well. Bring to a boil, stir and boil 1 minute. Mixture will thicken and be translucent. Add current jelly to raspberry sauce. Stir until melted, remove from heat and add raspberries. Refrigerate sauce least 1 hour.
Just before serving whip cream with sugar and extract. Add to chilled rice mixture. Serve with sauce over top.
