1 c. Water
1/2 c. Butter
4 eggs
1 c. Sifted flour

Filling:
1 1/2 c. Sugar
1/2 tsp. salt
1/3 c. Flour
2 c. Milk
4 egg yolks
2 tsp. vanilla

Directions:
Directions:
Put water and butter in a pan. Heat until boiling and butter is melted. Add flour all at once, stirring over low heat. Add 1 unbeaten egg, stirring until mixture is smooth and velvety. Repeat with 3 other eggs. Drop by spoonfuls onto greased cookie sheet 2 inches apart. Bake at 400º until no beads of moisture are on surface and they sound hollow when tapped. (for large 45 minutes and small 20 minutes). Cool puffs, scoop out centers of soft dough. Fill with custard filling or whipped cream.

To cook custard bring milk, sugar, flour and salt to a boil for one minute. Add the 4 egg yolks, bring to boil again. Add vanilla then it is done.
