1 1/2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 1/2 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. grated or ground nutmeg
1/4 tsp. ground cloves
1/3 c. water or milk
1/2 tsp. vanilla
6 Tbsp. butter, softened, or 1/3 c. vegetable oil
1 1/3 c. sugar or 1 c. sugar plus 1/3 c. packed brown sugar
2 large eggs
1 c. roasted yam or canned pumpkin puree
1/2 c. coarsely chopped walnuts or pecans

1. Preheat the oven to 350 degrees. Grease a 9x5-inch loaf pan.
2. Whisk together dry ingredients (except nuts)
3. Beat together milk, vanilla, butter or oil, sugar, and eggs.
4. Add mashed yam or pumpkin and beat on low speed just until blended.
5. Stir dry ingredients into wet just until blended.
6. Fold in nuts.
7. Pour into the prepared pan and spread evenly. Bake until a toothpick comes out clean, about 1 hour.
