3 medium eggplants
1 c. butter
3 large onions, finely chopped
2# ground lamb or beef
3 T. tomato paste
1/2 c. red wine
1 c. chopped parsley
1/4 tsp. cinnamon
Salt to taste
Freshly ground black pepper to taste
6 T. flour
1 qt. milk
4 eggs, beaten until frothy
Pinch of nutmeg
2 c. ricotta cheese
1 c. fine bread crumbs
1 c. freshly grated Parmesan cheese

Preheat Oven: 375º

Peel the eggplants and cut slices about 1/2" thick.
Brown in butter and set aside.

Heat 4 T. butter in same skillet and cook until the onions are brown.
Add meat cook 10 minutes.

Combine tomato paste, wine, parsley, cinnamon, salt and pepper.
Stir the mix into meat and simmer over low heat, stirring frequently until all liquid is absorbed. Remove.

Melt 8 T. butter, blending flour, stirring with wire whisk.
Bring milk to a boil and add it gradually to butter-flour mix, stirring constantly.

When mix is thick and smooth, remove from heat.

Cool and stir in beaten eggs, nutmeg and ricotta cheese.

Grease an 11x16" pan.
Sprinkle with bread crumbs.
Arrange alternating layers of eggplant and meat sauce in the pan, sprinkling each layer with Parmesan and bread crumbs.
Pour the egg sauce over the top.

Bake: 1 Hour, or until top is golden.

Let cool 20 minutes before slicing.
