2 large chicken breasts with bone or a whole chicken cut-up
3 long green onions
3 garlic cloves
Salt
Yellow Onion
1 lb. bag of frozen peas and carrots
"Color"
3 cups Rice: Golden Canilla Rice or Uncle Ben's (Use 2 cups water to 1 cup rice)
Sliced Hard-Boiled Eggs

Directions:
Directions:
Chicken soup:
1. Boil 2 liters of water. (About 8 cups)
2. Add the chicken. Bring to a boil. Remove any foam from the water.
3. Add 2 sliced long green onions, 2 crushed garlic cloves and salt to taste.
4. Reduce to simmer and cook until chicken is tender.
5. Remove the chicken and cool it. Then shred the chicken into bit-size pieces.

Rice:
1. With the broth from the chicken soup make the rice.
2. Boil 6 cups of broth for 3 cups of rice. Add 1 sliced long green onion and a crushed garlic clove and salt. If not enough liquid, add more soup broth.

Refrito:
1. Dice the onion and saute it in a frying pan with "color" until the onion is transparent.
2. Add the pieces of chicken. Mix.
3. Add the peas and carrots . Mix.
4. Season to taste.

Combine the rice and refrito and top with sliced hard-boiled eggs.
