Mix together the following
2 cups of shredded carrots
2 cups white sugar
1 can crushed pineapple
3 eggs
1 cup of oil
1 cup walnuts
1 pkg coloured coconut
2 tsp vanilla
1 tsp salt

In a separate bowl mix
2 cups flour
2 tsp cinnamon
2 tsp baking powder
Directions:
Directions:
Slowly add mixture into the 1st bowl of wet ingredients (fold slowly, do not over mix) Bake at 350 for one hour. Let cool then add icing.

Icing: 1 pkg cream cheese, 1 tsp butter, 2 tsp vanilla, ½ tsp salt, 2 cups of icing sugar.
