Croquettes:
½ - 10 oz can cream of celery soup
3 c finely chopped cooked ham (¾ lb)
1 c cooked rice
1 tbsp finely chopped green pepper
1 tbsp finely chopped onion
dash of pepper
2 c fine dry bread crumbs
2 beaten eggs

Sauce:
1 c sour cream
1 tbsp minced onion
1 tbsp prepared mustard
¼ tsp salt
⅛ tsp pepper

Croquettes:
Thoroughly blend the first 6 ingredients; chill. Shape the ham mixture into cones, rolls, or balls, using about ¼ c per croquette. Roll croquettes in bread crumbs, then in egg and again in breadcrumbs; let stand for 20 minutes or until coating is dry. Fry in a deep fryer until golden brown (about 3 minutes). Drain.

Sauce:
In a small saucepan, combine sour cream, minced onion, prepared mustard, salt, and pepper. Heat over low heat.

Serve croquettes with creamy mustard sauce.

Variations:
1. Instead of ham, use turkey. For a sauce over the turkey croquettes I have found that cream of chicken soup (slightly thinned) is good.

2. Instead of ham, use roast beef. For a sauce over the beef croquettes use cream of mushroom soup with extra mushrooms added, or the above creamy mustard sauce.
