Ingredients: Cookie dough: 2 cups sugar 3 eggs, whipped 1 cup shortening (1 stick butter and 8 Tablespoons of Crisco) 4 cups flour (or a gluten free flour mix with 124 grams of tapioca flour, 124 grams of sorghum flour, 248 grams of brown rice flour and 3 tsp xanthan gum) 1 teaspoon nutmeg ½ teaspoon ground cloves 1 teaspoon baking powder 2 Tablespoons water or orange juice
Paint: Powdered Sugar water food color paste

Directions:Cream shortening and sugar; beat in whipped eggs. Add baking powder and spices to one cup of the flour. Beat the cup of flour/spice mix into the shortening mixture; add water or orange juice, and then add the remaining cups of flour.
Refrigerate the stiff dough overnight. Roll out the dough on a floured surface until very thin. (If you are making these gluten-free, use rice flour to roll out the cookies.) Bake at 350º for about 6 minutes. Cool and then paint.
Paint: Mix together the powdered sugar and water until it is a thick, paint-able consistency. Add paste food color. |
