2 Tbsp yeast
1 cup very warm water
15 oz can sweet potatoes
1/2 cup sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 tsp salt
4 3/4-5 cups flour

Directions:
Directions:
In a large bowl, dissolve yeast in water. Let stand 5 minutes. Drain and mash sweet potatoes. Add to yeast mixture, along with sugar, butter, eggs, salt and 3 cups of flour. Beat until smooth. Add enough of remaining flour to form a soft dough. Knead for 7 minutes until smooth and elastic. Cover and let rise until doubled, about 1 hour. Punch down dough and divide into thirds. Roll each portion into a large circle. Cut each into 12 wedges. Roll up from the wide end and place, pointed end down on a greased baking sheet. Cover with a towel and let rise until doubled, about another hour. Bake at 350º for 15 minutes. Do not overbake.
