1/4 cup flour
Salt and pepper to taste
2 cups seasoned breadcrumbs
1 egg
1/4 cup milk
2 lbs. haddock in serving pieces
3 tbsp. butter
1/2 cup white wine
lemon wedges

Directions:
Directions:
Combine flour, salt and pepper on large piece of waxed paper. On another piece of waxed paper, place seasoned breadcrumbs. In pie plate, whisk egg and milk. Coat haddock in flour mixture and roll in egg then breadcrumbs. Arrange in single layer in pan and refrigerate 30-45 minutes. Preheat oven to 375º. Grease shallow baking dish to hold fish in single layer. In large nonstick frying pan, heat 2 tbsp. butter over medium heat. Add fish, skin side up. Cook a few pieces at a time turning until brown on both sides. Add butter as necessary. Transfer to baking dish and pour wine over and bake 15 minutes until fish flakes. Garnish with parsley and serve with lemon.
