5 anchovy filets, packed in oil
2 c. black olives, pitted
2 tsp. capers, drained
1 tsp. Dijon mustard
2 cloves garlic
1/4 tsp. thyme
6 tbsp. extra virgin olive oil
Fresh ground pepper to taste

Directions:
Directions:
1) Combine all ingredients except olive oil in a food processor and process to form a thick paste.
2) With the machine running, add oil in a steady stream until thoroughly incorporated.
3) Season with pepper. Serve with toasted pita triangles, bread sticks, or toasted French bread rounds.

Great with an antipasto platter! Good to make ahead; can be stored covered in the fridge for 1 week.
