1 cup bran
1 - ½ cups buttermilk
1 - ¼ cups all-purpose white flour
1 cup whole wheat flour
½ cup ground flaxseed
2 tsp baking powder
1 tsp baking soda
¼ tsp salt
⅓ cup liquid coconut oil
1 x-lge egg
¾ cup brown sugar
2 cups blueberries

Directions:
Directions:
Combine buttermilk & bran. Let sit while mixing remaining ingredients.

Sift white flour, baking powder, baking soda & salt together. Add whole wheat flour & ground flax seeds. Stir to combine.

Mix coconut oil, brown sugar & egg. Add to buttermilk mixture.

Stir into flour mixture. Fold in blueberries.

Put into greased muffin tins. Bake @ 400℉ 15 minutes, or til done.

Makes 12 large muffins.

To increase nutritional value, replace ¼ cup white flour with ½ Gerber rice cereal.
