4 russet potatoes
Salt and pepper to taste
3 T butter
3 T flour
2 cups of milk
1 1/2 cups shredded cheddar cheese

Directions:
Directions:
Preheat oven to 375. Butter a 1 quart casserole dish. Slice potatoes into 1/4 inch slices and place in casserole dish. In a medium size saucepan melt butter over medium heat. Mix in flour, salt and pepper, and stir constantly with whisk for 1 minute. Stir in milk and cook until mixture has thickened. Stir in cheese, saving a small amount for topping, and stir a couple minutes until cheese is all melted. Pour cheese over the potatoes, then a little cheese on top. Cover the dish with foil and bake one hour. Uncover and continue to bake another half hour.
