Ingredients: 1 pkg Pepperidge Farm Pastry Sheets (2 sheets per pkg) 2 - 16oz cans Salmon or you can use fresh 3/4 cup Hellmans Mayonnaise 3/4 cup Bread crumbs (unseasoned) Fresh Dill 1 large cucumber 2 large yellow onions 2 eggs

Directions:In a large bowl mix salmon, mayonnaise, bread crumbs and one chopped onion. Mix thoroughly. You can add salt and pepper to taste. Mix in two beaten eggs and mix again.
Lightly dust a flat surface with flour and begin to roll the pastry sheets - one at a time. Be careful not tear the perforated sides. Once you have rolled out the sheets, begin to spread your mixture evenly. Starting at one end (with the the perforated lines facing you) begin to roll the sheet until you are done. Place the roll on cookie sheet (seam side down) and give it an egg wash for sheen. Repeat with second roll. Bake in a preheated 350 oven until lightly golden.
Cucumber dill Sauce: Dice seedless cucumber and onions and mix in a bowl with 3/4 cup of mayonnaise and 2 tbsp cold water (to loosen) add chopped dill about a 1/4 cup and salt and pepper to taste. Chill until ready to serve. |
