Directions as written are for a bird approx.. 14 pounds
Always start with a room temperature bird.
Stuff turkey with your chosen stuffing. Place stuffing in neck end of bird and in the body cavity.

1.Spread 6 oz. of softened butter all over the bird.

2.Lay strips of bacon over the breast of the bird (I cover legs with bacon too!)

3.Arrange two large sheets of foil across your roasting pan, one widthwise and the other lengthwise.

4.Lay the turkey on its back in the middle of the foil and wrap loosely-the parcel should be firmly sealed but with room for air to circulate around the turkey.

5.Place in a preheated 425º oven for 40 mins. Reduce heat to 325º for 3 1/2 hours.

6.After this time, remove turkey from oven, uncover, discard excess foil. Baste with the juices and increase the oven temperature to 400º.

7.Cook uncovered turkey for a further 40 mins.- remove bacon from turkey when bacon is browned, and allow turkey to get a final browning

8..Remove browned turkey from oven (check internal temperature for doneness), tent loosely with foil and allow bird to rest at least 20 mins. before carving

Internal temperature: 165 for breast, 175-180 for thigh, and 165 in cavity if stuffed.
