Ingredients: 1 lb. stew meat 1 or 2 large yellow onions Lots of paprika (1/2 cup), or to taste Lots of garlic (one head), or to taste 1 tsp. salt Cooking oil 1 can chicken or beef broth 3 tbsp. cornstarch Small can tomato sauce 1 tbsp. white vinegar
Egg noodles, cooked per package directions, or potato balls

Directions:Cube stew meat. Warm up pot then pour in cold oil. Brown meat and onions. Add salt, paprika, and garlic. Add water or broth. Boil until meat is tender. Mix the cornstarch with a small amount of cold water to make a paste, then add to the pot. Add the tomato sauce. Add the vinegar. Serve over hot buttered egg noodles or potato balls. Garnish with chopped parsley, if desired. |

Notes: Mom gave us this recipe when we asked how to make goulash. She suggested using round steak in place of stew meat because it cooks faster but both make good goulash. Also you can add bouillon cubes to intensify the broth, if desired. She also said that it's important to adjust the garlic and paprika to taste. Mom used to serve this with potato dumplings, or over wide egg noodles. It was always good. I remember having the leftovers for lunch the next day and it was just as tasty.
