1 large beet, diced
1 tomato
2 carrots, peeled and diced
1 medium onion
2 -3 tbsp oil
1 tbsp lemon juice
Salt

Directions:
Directions:
1. Cook the diced beet and diced carrots until tender.
2. Thinly slice the onion and wash in warm water. Drain and add the oil, lemon and salt.
3. Dice the tomato.
4. Add the tomato, beets and carrots to the onion mixture. Salt to taste.
