"Meatballs":
1 sleeve saltine crackers (or Ritz)
3/4 c. cheddar cheese, grated
3/4 c. walnuts, finely chopped
1 sm. onion, finely chopped
1/2 tsp. salt
1 1/2 tsp. ground sage
3 tbsp. fresh parsley (less if using dried)
4 eggs

Apricot Barbecue Sauce:
1/4 c. oil
1/4 c. lemon juice
3/4 c. apricot jam
1/2 c. ketchup
2 tbsp. brown sugar
2 tbsp. dried onion
1/2 tsp. salt
1/2 tsp. oregano

Directions:
Directions:
Preheat oven to 350º.

Process crackers in a food processor to crumbs. Combine crackers with remaining "meatball" ingredients. Form into balls. Heat oil in a large frying pan and cook "meatballs" until golden.

Mix together the ingredients for the apricot barbecue sauce.

Place "meatballs" in a baking dish and pour sauce over them. Bake until hot and bubbly, about 15-20 minutes.
