2 T. butter
1 medium finely chopped onion
1 medium carrot, coarsely shredded
3 large shallots, chopped
1-14 oz. can vegetable broth
1/3 cup flour
1 cup whole milk
1 tsp. caraway seeds crushed
1/4 tsp. pepper
10 oz. sharp cheddar cheese
4 cooked smoke brats, knockwurst, or polish sausage
1 can of beer

Directions:
Directions:
In a large saucepan, heat the butter over medium heat. Add onion, carrots, and shallots; reduce heat to medium low. Cook, stirring about 10 -15 minutes. Mix broth and flour together. Stir into onion mixture. Add the milk, Caraway seeds, and black pepper. Cook over medium heat, for 15 min. or until mixture is thickening. Gradually stir in cheese; reduce heat to low cook and stir until cheese melts but do not boil. Stir in Brats and Beer. Cook, until heated through.
