9 pears (peeled, cored and chopped)
1/4 cup sugar
1 1/2 tsp cinnamon

Directions:
Directions:
Put all of the cut pears into a stockpot onto the stove. Add the sugar and cinnamon. Cook at medium-low heat for about 20-25 minutes. The sauce should be bubbling but not boiling.
Take the pear pieces out of the pot with a spoon that filters out the liquid part. Transfer just the cut pears into a blender. Set the pear liquid aside for now. Blend the pears to a consistency that you want. Refrigerate the sauce until cool and serve or freeze for later!

Save the pear juice for making pear brandy or just to enjoy by itself.

I made this as something special for Thanksgiving. It does take some time, but in my mind...so well worth it. It is most delicious. I used two kinds of pears from the Harvestfest in Hood River this year. Organic and straight from the farm. Amazing!!!
