In a large bowl beat together:

2 eggs
1/4 cup margarine
3/4 cup sugar
1 cup milk
1 tbsp lemon juice


In a smaller bowl stir together:

2 cups flour
1 tbsp baking powder
1/2 tsp baking soda

2 cups blueberries
1/2 cup chopped walnuts

Directions:
Directions:
Combine wet and dry ingredients and stir together gently until just mixed. Add blueberries and walnuts and fold together.

Baked at 375º F for 20 minutes.

Variations: substitute cranberries for blueberries, substitute lemon juice for vanilla.

Hint: Do not defrost frozen blueberries or cranberries before using. Coat blueberries with a tbsp of flour to keep the juice inside the berry while baking.
