City Chicken Mix (available at Joy View Market or Dearborn Sausage)
Salt
Cracker Meal or Bread Crumbs
Eggs (3 to start)
Water
Crisco
Margarine

Directions:
Directions:
*Take premade City Chicken mixture and add salt.
*Have 3 bowls ready with cracker meal/bread crumbs in 2 bowls and 1 bowl with eggs (beaten).
*Roll City Chicken in cracker meal/bread crumbs then into egg mixture then back into cracker meal/bread crumbs.
*Fry in Crisco - to get a nice crust.
*Put City Chicken in roasting pan (stand them up) and add a little water and some margarine (break up in pieces)
*Bake at 350 until they are soft - 30 city chicken take about 2 1/2 to 3 hours
