12 artichokes
2 cups seasoned breadcrumbs

pecorino- romano cheese

If you want female artichokes- they are short and rounded. The males are longer and leaves are more pointy. Some think that the females are better.

Cut the stems of the artichokes off so the artichoke sits flat. Peel the stems and dice them small. Add the pieces to the breadcrumb mixture.

Cut the top of the artichoke off with a knife and tips of each of the leaves off with scissors. Roll the artichoke, then flip it so the part with cut leaves is being pushed. Then pull the artichoke open so that it creates a bit of a cup. Fill the artichokes with the breadcrumb mixture.

Fill a large sauce pot with water so that the water is halfway up the artichokes. Add salt to the water. Add the artichokes in the pot so they are snug. If making fewer artichokes in the pot, use a smaller pot. Drizzle a little olive oil on each artichoke. Cook on medium heat for a half hour, then pull a leaf to see if they are soft. If the leaf does pull out easily, they are not done. If not, continue cooking and check every 15 minutes. If the artichokes are tough, they may have to cook up to hours.
