1 lb split peas
8 cups chicken broth
1 lb finely diced ham
1 cup diced onion
1 cup diced carrots
1 cup diced celery
1 tablespoon minced garlic
4 tablespoons butter

Directions:
Directions:
Rinse split peas and set aside
In large pot melt butter on medium. Add diced onions, celery and minced garlic. Saute until onions are clear. Add carrots, ham, split peas and chicken broth. bring to a boil. Once a boil has been achieved set temperature to low and slowly simmer for an hour stirring every 5 minutes or so. At one hour check consistency. Keep simmering in 15 minute increments until split peas are completely soft.

I've found that different brands of split peas cook at different speeds so it's important to keep checking the consistency. Some split peas come with a flavoring packet. Add the packet when you add the split peas. If you didn't get a flavoring packet you can add a ham bullion cube or two.
