4 c. onion, grind
4 c. cabbage, grind
4 c. green tomatoes, grind
8 c. peppers (mix colors use mostly red)
1/2 c. salt
6 c. sugar & 1/3 cup more sugar if you like.
1 tbsp. celery seed
2 tbsp. mustard seed
1-1/2 tsp. turmeric
4 c. apple cider vinegar & 1/4 c. additional if you like.
2 c. water

Directions:
Directions:
Grind all vegetables and put in large crock or pot..Sprinkle salt over vegetables.Let set overnight. Next day rinse and squeeze dry, place in pot for cooking. Add sugar, celery and mustard seeds, turmeric, vinegar and water. Cook for 25 min..
While hot, place in clean jars and seal.
Can do a hot water bath if so desired to insure sealing

Hanna Gloyd of Boyds gave me this recipe one summer when she was teaching me all sorts of great canning inspirations - like strawberry preserves...James Christopher was right there with us in his pack-n-play. I've made this relish many times along with zucchini relish which was Andy's favorite. Now, somebody else can have a go at it! Call Barbara Parsley if you need help.
