Blueberry French Toast Recipe

12-15 slices day old bread
8 oz cream cheese
1 c frozen blueberries
12 eggs
2 c milk
1/3 c honey

SAUCE
1 c sugar
2 Tbsp cornstarch
1 c water
1 c blueberries

Directions:
Directions:
Grease 9x13 pan. Cube bread and spread in pan. Cube cream cheese, spread evenly over bread. Sprinkle 1 cup blueberries on top. In a mixing bowl blend eggs, milk and honey. Pour over baking pan contents. Cover and refrigerate 6-8 hours or overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350º. Bake, covered, at 350º for 30 minutes. Uncover, bake 30 more minutes. Serve with sauce.

Blueberry Sauce:
Mix sugar, cornstarch and water in saucepan. Bring to a boil. Stir in blueberries. Reduce heat, cooking until blueberries burst. Serve warm over French Toast.
