Ingredients: 5 chicken breasts 1/2 cup whole wheat Italian seasoned breadcrumbs 1/4 cup grated parmesan cheese 6 tablespoons egg whites or egg beaters 5 oz. frozen spinach, squeezed dry of any liquid 6 tbsp. part skim ricotta cheese 6 oz. part skim mozzarella olive oil non-stick spray 1 jar vodka sauce

Directions:Take chicken breasts and slice length wise so they can be stuffed. Combine parmesan cheese and bread crumbs in one bowl and put the egg whites or beaters in another. In a large bowl shred spinach and add ricotta, 2 tbsp. egg beaters, and 1/4 cup of parmesan cheese. Mix well. Take a chicken breast and stuff it with the spinach cheese mixture. Then dip in the egg beaters and cover in bread crumbs. Place into baking dish and bake for 25 minutes at 450. Remove from oven, top with slices of mozzarella cheese and vodka sauce. Bake until cheese is melted. |
