4-oz. salmon fillet
1 tsp maple syrup
1 tsp Dijon mustard
1 tsp olive oil
2/3 cup cooked brown rice
1/2 tbsp dried cherries
1/2 tbsp crushed pistachios
tsp chopped parsley
1/8 cup orange juice

Directions:
Directions:
Mix syrup and mustard and spread over salmon fillet. Bake at 400º for 8 to 10 minutes.
In a saucepan, combine remaining ingredients and heat through.
