1 stick butter
1 cup sugar
2 eggs
1 tsp vanilla
2/3 cup sifted plain flour
1 tsp baking powder
¼ tsp salt
1 cup chopped pecans
1 cup chopped candied cherries, red or green
1 cup chopped dates
dark rum for drizzle, optional

Directions:
Directions:
Cream butter, add sugar, and cream until light and fluffy. Add eggs, one at a time, beating after each. Add sifted dry ingredients nuts, fruits, mix well. Spread batter into a greased 9” square pan (place greased parchment paper on bottom of pan with ends extending out of pan – this will enable you to lift the cake out of pan while slightly warm.) Bake 350˚ for 35-40 min (check after 30 min with a toothpick). While warm cut into small rectangles and dip in sugar. This can be messy, use a greased knife. Optional - drizzle dark rum across the top while still in the pan; then dip in sugar.
