3 egg yolks
2 Tbsp lemon juice
a pinch of cayenne pepper
1/4 tsp salt
1/2 cup butter, heated to bubbling, but not browned

Directions:
Directions:
Place egg yolks, lemon juice, cayenne and salt in a blender. Blend on high. Remove the lid, and with the motor running pour in the butter in a steady stream. By the time the butter is poured in, about 30 seconds, the sauce should be finished. If not, blend for another few seconds. Serve at once or keep warm by immersing the blender container in warm water. This sauce can be frozen and reconstituted over warm water.
