1 chicken breast
1 small onion
3 cloves garlic, minced
1/2 red pepper, chopped
1/2 c. cilantro, chopped
3 c. rice
1 c. frozen mixed vegetables
1 (32 oz.) box chicken stock
1 tsp. of salt
1/2 tsp. pepper
2 tsp. adobo

Directions:
Directions:
In a medium deep pan, pour box of chicken stock. Add the chicken breast and boil. After boiling, remove chicken, let it cool, then shred meat. Reuse the chicken stock to cook the rice.

If you have a rice cooker, add 3 cups of white rice, 2 3/4 c. of the chicken stock, frozen vegetables, salt and onions. Cook until done, mix it and turn off cooker. If you don't have a rice cooker, simmer mixture on stove top until all liquid is absorbed and rice is cooked.

While the rice is cooking, add 2 tsp. of oil to a pan. Add minced garlic and cook for 4 minutes on medium-low. Be careful not to burn garlic. Add the shredded chicken, pepper, some salt and 2 tsp. adobo. Cook for approx. 10 minutes. Add the chicken mixture to the rice and mix.
