2 lb. med. shrimp, shelled and deveined
1/2 c. dry white wine
2 c. (8 oz.) shredded Monterey Jack cheese
2 tbsp. butter or margarine
2 large cloves garlic, minced
1/4 tsp. ground red pepper
2 tbsp. chopped fresh parsley

Directions:

Preheat oven to 350º.

In a large skillet, melt butter; add garlic. Cook over medium heat 1 minute. Add shrimp and red pepper; cook about 4 minutes, stirring often, until shrimp turn pink. Using slotted spoon, transfer shrimp to 11" x 7” baking dish. Add wine to skillet; bring to a boil. Cook about 5 minutes over high heat, stirring constantly; until liquid is reduced by half. Pour reduced liquid over shrimp in baking dish. Combine Monterrey Jack cheese and parsley; spoon over shrimp. Bake in preheated oven about 10 min, or until cheese is melted.

Serves 6.
