3 tbsp. lime juice
3 tbsp. sugar
3 tbsp. ketchup
3 tbsp. fish sauce
1 package rice noodles
unsalted peanuts
1 package firm tofu
shrimp
chicken
garlic and ginger to taste
3 thai chili peppers
3 eggs
bean sprouts

Soak rice noodles in water overnight (use thicker noodles). Drain them.
- Prepare everything first, it makes life a whole lot easier (speaking from experience). And use 1 frying pan throughout the preparation too - less to clean after.
- For the sauce you need 3 tablespoons each of lime juice, sugar, ketchup and fish sauce (double the sauce if you make it with the whole package of noodles - unless you like it dry).
- get unsalted peanuts and put them in a ziploc bag and hit them with something to break them into small pieces. Then roast them in a frying pan - no oil - and remove.
- Get a package of firm tofu and make sure you pat it off to make it dry ("oil and water don't mix"), cut the tofu into cubes and fry them with some oil and remove.
- Cut up some chicken and fry them up too in oil. Then add some shrimp (cleaned with no tails of course - unless you like the tails in your food) and heat them up with the chicken and remove.
- Chop up some garlic and ginger - or cheat and use the minced garlic and ginger in a jar like I do - work smater not harder!!
- Cut up 3 Thai Chilli peppers - wash hands after (ouch if you rub your eyes)
- Now add a little more oil to your pan and get it hot. Add the chilli peppers, ginger and garlic then add 3 eggs right into pan, break them up and scramble them. Now add the sauce, noodles, chicken, shrimp and tofu and mix it all together.
- Take off the heat and add the peanuts and some bean sprouts. And then enjoy !!
