Brine:
2 quarts water

1/3 cup salt

1/3 cup light brown sugar
21bs shrimp with shell (the largest you can find)
Marinade:

3T olive oil

3T dry white wine

3-4 cloves garlic - chopped
2T parsley - chopped
1/2t red pepper flakes
Basil Pesto

Directions:
Directions:
Dissolve salt and brown sugar in water, add shrimp. Cover and refrigerate for 4 hours. Drain and rinse shrimp. Remove the vein and butterfly the shrimp, leaving the shell on.
In a large bowl, stir together the marinade ingredients. Add the shrimp, stir gently and let sit for about 30 minutes.
Heat the grill to medium heat. Place shrimp flesh side down on grill. Grill 2-3 minutes, then turn over to finish cooking, another 3 minutes.
Serve with pesto on the side.
