A crispy topping savory with Parmesan cheese, garlic, and basil contrasts with the tender, juicy fish beneath.

1/2 lemon, peeled and seeded
1/2 cup olive oil
2 large garlic cloves, minced or pressed
3 tablespoons fresh basil (1 tablespoon 
dried)
2 pounds fish fillets
2 cups whole wheat bread crumbs
2/3 cup freshly grated Parmesan cheese (2 ounces)
1/8 teaspoon black pepper

Directions:
Directions:
Puree the lemon in a blender with the olive oil. Pour the lemon mixture into a heated skillet, sizzle for a minute or two, and then add the garlic and basil, sautéing until an aroma rises from the pan. Mix in the breadcrumbs until they are thoroughly coated with oil. Saute the breadcrumbs, stirring often, until they are dry. Remove the mixture to a bowl and stir in the Parmesan cheese and black pepper.
Place the fish in an oiled baking pan and spoon on the topping. Cover and bake for 20 minutes at 350° or until the fish whitens and flakes easily with a fork.
