1 cup sifted enriched flour
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
1 cup yellow corn meal
2 eggs
1 cup milk
1/4 cup butter

Directions:
Directions:
Sift together flour, sugar, baking powder and salt; stir in corn meal. Add eggs, milk and butter. Beat with rotary electric mixer until just smooth, about 1 min; do not overbeat. Pour batter into greased 9x9x2 inch pan. Bake at 425º.
