2 lbs. red small potatoes - unpeeled
Salt to taste
1/2 lb. bacon - cooked and crumbled
1/2 c. chopped fresh chives
3 T. fresh lemon juice
2 T Dijon mustard
1/2 c. olive oil
Pepper - to taste

Directions:
Directions:
Cook the potatoes in boiling salted water for about 12 minutes or until tender. Drain and slice. Combine with the peas, bacon, and chives. Whisk the vinegar, lemon juice, mustard, olive oil, and salt and pepper to taste, and pour over the potato mixture tossing gently to combine.
