3 - 4 boneless, skinless chicken breast cut length-wise. Or use thin chicken cutlets if you can find them at the store.
2 eggs (for dipping)
Oil for frying
Coating:
1 c. Italian breadcrumbs
1 c. plain panko breadcrumbs
1/4 c. finely chopped fresh (or dried) parsley
1 tbsp. fresh or dried thyme
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt and pepper to taste

Directions:

Mix coating ingredients together in a ziplock bag.
Coat chicken with egg and then coating.
Use enough oil to coat bottom of frying pan.
Fry chicken about 2 - 3 minutes on each side.
