1 lb. Ground beef
1 Large onion, chopped
1 Can stewed tomatoes
1 Can corn (with juice)
1 Can mushrooms (with juice)
1 Can mixed vegetables (with juice)
Cilantro
Garlic
1.25 Cups rice

Directions:

Brown the beef in a soup pot.
Add the chopped onion.
Add 10 cups of water and all other ingredients.
Cook 1.5 - 2 hours.
If not thick enough, add more rice.

I remember every summer when we arrived for our vacation in Michigan, Grandma would have a pot of this soup ready for us when we arrived. I have a feeling there may have been variations year to year but this one is from her recipe card so this was the original! Best served in a pink plastic bowl, with a pile of oyster crackers, surrounded by family!
