4 T. butter
3 finely chopped Leeks (white part only)
1 c. chopped sweet onion
1 T. of fresh Thyme leaves
1/4 C. flour
4 C. chicken broth
1 head cauliflower, cut into 1" florets (~6 cups)
1 c. heavy cream
1 tsp. coarse salt
1/2 tsp pepper
1/4 tsp freshly groung nutmeg

Directions:
Directions:
Melt butter in a soup pot. Add chopped leeks and chopped onion. Stir in Thyme leaves and cook slowly until onions are soft. Stir in flour and continue cooking for 3 minutes. Gradually stir in chicken broth and bring to a boil. Add chopped cauliflower. Simmer for 30 mins, or until cauliflower is tender. Add heavy cream and season with salt, pepper and nutmeg. Check/taste for seasoning and serve. You may blend/puree if you desire.

This recipe is from Gene's Aunt Rosemarie Haupt. I have not tried it yet, but sounds good if you like cauliflower and leeks!!
