4lbs beef, lamb, meat
olive oil & flour for browning meat
1 large sweet/yellow onion, sliced thin
3 whole cloves garlic
2-3 bay leaves
1-2 stalks Celery, cut in pieces
Salt & Pepper to taste
few drops Worcestershire Sauce
1c. red wine
Beef Bouillon/Beef Broth
3 large Carrots cut in pieces
Cornstarch
Cooked Egg Noodles or Potatoes-whichever you prefer

Directions:
Directions:
1-Lightly flour & brown meat in fry pan with olive oil to sear in juices. (Can skip this step if you don't have time.)
2-Line crockpot with raw, thin sliced onions.
3-Add all ingredients above to crock pot except carrots. Add enough beef broth to just cover meat.
4-Cover and cook in crockpot on HIGH for 6-7 hours. Add carrots in to cook for at least 1 hour toward end of cook time.
5-Take everything out with slotted spoon, strain liquid and make gravy. Thicken liquid in pan with thick cornstarch & cold water mixture.
6-Serve with potatoes or egg noodles, whichever your prefer!

I like to use any combination of beef, lamb, short ribs or ox tails for this recipe! If you don't have time, you can just throw the meat into the crockpot without browning...it will still come out nice and tender! Also, can be done covered in oven @ 325 for 3-4hrs...cook until meat is nice and tender! Should be falling apart!
